Baby gem lettuce hearts, cut in half lengthways

Radishes, sliced on a mandolin or thinly sliced by hand

Soy sauce

garlic clove, grated

Juice of lime

Red chilli, deseeded and finely chopped

Thai fish sauce

Rice wine vinegar

Brown sugar

sesame oil
