Ingredients

all purpose flour

baking soda

salt

ground cinnamon

shredded coconut

ground ginger

eggs

buttermilk (I made my own with 1 cup low fat milk + 1 tablespoon vinegar)

sunflower oil

brown sugar

vanilla extract

grated carrots

canned pineapple (cut in fine pieces, no juice)

chopped walnuts (or pecans)

white granulated sugar

baking soda

buttermilk

without salt

vanilla extract

butter at room temperature

cold full cream cheese (like Philadelphia)

vanilla extract (I omited this because I wanted the frosting to be white)

sifted icing sugar

salt
