This is a tasty panzanella salad with a slight twist. A classic panzanella is a Tuscan bread salad that consists of crispy croutons, tomatoes, cucumbers, onion, basil and a vinaigrette dressing. I had planned on making this salad with couscous, but decided to try it with millet to make it a more substantial and healthy salad. Millet is much healthier than couscous and it holds up a little bit better.

Ingredients

Dried Millet

Filtered Water

Vegetable Bouillon Cube – unsalted

Sea Salt

Cherry Tomatoes

Roasted Red Bell Pepper

Roasted Yellow Bell Pepper

Red Onion – Minced

Fresh Basil – torn

Asiago Cheese – finely shredded

Extra Virgin Olive Oil

White Wine Vinegar or Champagne Vinegar

Cloves Garlic – minced

Black Pepper

Country Bread like Ciabatta – torn

Extra Virgin Olive Oil

Asiago Cheese – finely shredded
