This soup is a “warming of the soul” kind of soup, with its subtle flavors of Indian spice. The fresh basil, cilantro and lime gives it a nice fresh depth of flavor.

Ingredients

French Green Lentils

Filtered Water (or vegetable stock)

Coconut Oil

diced

Garlic – minced or pressed

Dry White Wine

Bouillon Cube – unsalted (omit if using vegetable stock)

Turmeric

Fresh Thyme

Gram Marsala

Paprika

Cayanne Pepper

Coconut Milk – full fat

Fresh Basil – or to taste- minced

Cilantro – or to taste- minced

Kale – about 6 leaves – rib removed, thinly sliced (optional)

Fresh Squeezed Lime Juice – or to taste

Sea Salt – or to taste

Black Pepper – or to taste
